Authentic Pakistani Chicken Biryani Recipe

The Best Pakistani Chicken Biryani Recipe

Welcome to our authentic Pakistani chicken biryani recipe! If you’re a fan of mouthwatering, traditional Pakistani and Indian flavors, you’re in for a treat. This recipe will guide you through the process of creating a delicious biryani dish that will leave you craving for more.

Ingredients

  • 2 cups basmati rice
  • 500g chicken, cut into pieces
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, slit
  • 1/2 cup plain yogurt
  • 1/4 cup fresh cilantro leaves, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon garam masala
  • 4 cups water
  • 4 tablespoons oil
  • Salt to taste

Biriyani masala

  • Dried long red peppers 
  • Bay leaves 
  • Cinnamon sticks 
  • Coriander seeds 
  • Cumin seed
  • Caraway seed
  • Mace 
  • Cloves long 
  • Green cardamom 
  • Black peppercorn
  • Anise 
  • Fennel seed
  • Netmug 
  • Turmeric powder 
  • Red chili powder 
  • Salt 

Instructions

Follow these simple, easy-to-follow instructions to create the perfect Pakistani chicken biryani:

  1. Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain the rice and set it aside.
  2. In a large pan, heat 2 tablespoons of oil over medium heat. Add the sliced onions and cook until they turn golden brown. Remove half of the fried onions and set them aside for garnishing.
  3. In the same pan, add the remaining 2 tablespoons of oil. Add the minced garlic, grated ginger, and green chilies. Sauté for a minute until fragrant.
  4. Add the chicken pieces to the pan and cook until they are browned on all sides.
  5. Reduce the heat to low and add the chopped tomatoes, cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Cook for 5 minutes, stirring occasionally.
  6. In a separate bowl, whisk the yogurt until smooth. Add the whisked yogurt to the pan and mix well with the chicken and spices.
  7. Cover the pan and let the chicken cook for about 15-20 minutes until it is tender and cooked through.
  8. While the chicken is cooking, bring 4 cups of water to a boil in a large pot. Add the soaked and drained rice to the boiling water. Cook the rice until it is 70% cooked. Drain the rice and set it aside.
  9. Once the chicken is cooked, remove half of the chicken from the pan and set it aside.
  10. Layer half of the partially cooked rice over the remaining chicken in the pan. Sprinkle half of the chopped cilantro and mint leaves on top.
  11. Place the reserved chicken on top of the rice layer. Add the remaining rice on top of the chicken.
  12. Sprinkle the remaining chopped cilantro and mint leaves on top of the rice. Also, sprinkle the garam masala over the rice.
  13. Cover the pan tightly with a lid or aluminum foil. Cook on low heat for 15-20 minutes to allow the flavors to meld together and the rice to fully cook.
  14. Remove the pan from heat and let it sit, covered, for another 10 minutes to allow the biryani to steam.
  15. Remove the lid and gently fluff the rice with a fork. Garnish with the reserved fried onions.
  16. Your delicious Pakistani chicken biryani is now ready to be served! Enjoy it hot with raita or a side salad.

To ensure that your biryani turns out fluffy, flavorful, and absolutely delicious, here are some additional tips:

  1. Use good quality basmati rice for the best results. Soaking the rice helps to achieve the perfect texture.
  2. Do not overcook the rice during the initial boiling process, as it will continue to cook while layered with the chicken.
  3. Marinate the chicken for a few hours or overnight to enhance the flavors.
  4. For an extra burst of flavor, you can add a pinch of saffron soaked in warm milk to the rice layers.
  5. Ensure that the lid of the pan is tightly sealed to trap the steam and cook the rice evenly.
  6. Allowing the biryani to rest after cooking allows the flavors to develop and the rice to absorb the aromas.
